Panda Goodness

If you know me, you know that I love love love Panda! Holy cow, it is so yummy. I wish there was one here. Too bad I have to drive to Tri-Town just to enjoy the goodness...that might be a good thing. So that I wouldn't have it every other day. Anyways, so my awesome sister Jeni called me one night and said, guess what, they have Panda orange sauce here at Costco! And on top of that, it is under 5 bucks. Good deal. So I made a trip to town last weekend (not specifically for the sauce ;) ), and bought it. So Monday night, I got straight to business, I knew what was going to be on the dinner menu. Here it is... hmmmmm.

We were lucky enough to have leftovers, cause we got so full so quick. Which is a good thing, cause that means an easy lunch for the next few days!

For the chicken, I didn't really follow a specific recipe. I sort of looked at a few recipes and just went along with the ones that seemed more yummy.

Boneless chicken breasts (However many you think you'll need)
1 egg
Salt & Pepper
Vegetable Oil
1/2 Cornstarch
1/4 Flour
& the infamous Panda sauce

Thaw the chicken, cut up into bite size pieces. Put into a medium sized bowl. Add egg, S&P, Tbs of oil, & mix well. Then add cornstarch & flour. Stir well, coat all pieces. With my amount of chicken, I ended up adding more cornstarch & flour. In a frying pan, put some oil in for frying. Gently add in covered chicken pieces into hot oil. Do a few batches, don't do all at once. Fry for about 3-5 minutes, flipping sides. I like my chicken more crunchy, so I wanted it a little more overcooked, yes...I am weird. Drain on paper towel to get excess oil off. When done frying, combine chicken and sauce together. Add however much sauce you desire. I like it saucy!
I hope you can make it to Costco sometime soon and take the opportunity to make this. Derek said that we should have this at least once a week...that might be too excessive.

OMGOODNESS LOOKS SO YUMMY!!!! Is that picture in the background behind your title in by the s curves in mattawa. I forgot how pretty fall was with all the orchards and farming!!!! Love ya!

Oh man! I was just at Costco and didn't even look at that stuff...I would have bought that delicious sauce.
