pretty darn good cookies


I love me some sugar cookies. hmmmm. But I hate the roll out ones, just seems like too much of a hassle.
I came across this recipe on allrecipes.com. And boy were they delish. I took them into work and they didn't last very long. Everyone thought I bought them.
The night I made them, Derek came home and he was like, "ahhh man...sugar cookies! I hate sugar cookies." I said, "Well tough, I like them". The next day, he said that he had some of those cookies for breakfast and that he changed his mind, "they are pretty good". Silly boy.
Oh and just ignore how much butter you need... ;)

Drop Sugar Cookies


1 1/4 C. white sugar
1 C. salted butter
3 egg yolks
2 tsp. vanilla
2 1/2 C. all-purpose flour
1 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. salt
1/3 C. sugar crystals or regular sugar


Directions:


Preheat oven to 350 degrees.


Cream together butter and sugar. Mix in 1 egg yolk at a time and vanilla.
Add flour, baking soda, cream of tartar, and salt until cookie dough is mixed.
Using a medium scoop, form dough balls and roll them in the sugar crystals. 
Place cookie balls on cookie sheet lined with parchment paper (best invention ever).
Bake for 12-14 min (I didn't bake mine for that long. I did about 10.) until the surface of each cookies have a cracked like texture. Remove from oven and allow to cool for 5 min.


These also freeze really well.

as of late...

 Derek celebrated our 2 year anniversary. It was on a Sunday so we just went out to dinner the night before. It was awesome. I also can't believe that it has been 2 years. It feels longer for some reason! 
This Summer has had some eventful things to post. I have been pretty busy with work, so no play time for me. I have missed a few vacations with Derek's family and my family. Boo!

But my Mom and I were able to escape for a few days and have some fun with Jeff and Sadie. Oh and of course cutie pie Reagan! 
We ended up painting their kitchen burnt orange! So fun.
 That weekend we came back was 4th of July. Boulder Resort threw a great party, like always. 

Hailey was loving the kettle corn. I think she was also mad at me. It was hilarious to watch her get mad. She would put her head down and try to walk off, but she would have a hard time walking because she was focusing on her head!

 The men had quite a game of basketball. Very physical. They had some battle wounds to show off after wards.

 Now that we have a bigger place, it's more fun to have people over. My parents and Jared came over for some cards one Sunday. I totally dominated them at Oh Heck.
 Isn't this cute? They were both wearing yellow, so I had to snap a pic.
 And then Jeff and Sadie decided to make a trip to the Resort, so we all got together, again!
Here is Grandpa with some of his favorite girls. They love him! Lindsey and Reagan are a week apart and they just celebrated their birthdays this past week.

 Derek and I have been busy fixing up our new place. He has been loving the yard work. Well just mostly mowing the lawn. He said he thinks he has found his new hobby. haha I have been busy painting walls and baseboards. And also a little sewing. Every morning we are blinded by the sun, and this little guy has helped soo much. Super easy to sew. 
I was shocked when my mom was telling me how I should sew it, it just seemed way too easy. 
It is now August and I am sad. I don't want winter to come. I want warm weather. I also want a tan...oh well.
